This liqueur is made from unfermented grape must mixed with one-third Bourgogne marc. The grape juice is said to be “muted” since its fermentation is halted by the addition of alcohol. Before serving, bring the Ratafia to a temperature between 8 and 10°C.
Store the bottle upright, away from light, and at a constant temperature of 12 to 14°C, like wine, for up to a decade. It becomes smoother over time. Once opened, the bottle should be consumed within the following month.
Ratafia can be enjoyed neat as an aperitif, but it is also a component in many cocktails such as the Ratarosé: 1/3 Ratafia, 2/3 rosé wine, or the RataPamp with 4/5 Ratafia and 1/5 grapefruit juice.
