Wife of Nicolas Rolin, the founder of the Hospices de Beaune, Guigone de Salins, moved from Autun to Beaune after the death of her husband, to take the direction of the Hôtel-Dieu to which she devoted a great dedication and a good part of her fortune. This cuvée dedicated to her consists of three beautiful climates which are the Bressandes, the Seurey and the Champs-Pimont. The color is deep in a bright and pure ruby . The bouquet, rich and powerful, reveals a charming depth of cherry set with subtle woody notes that brings from the outset a great finesse. This elegant wine, marked by silky tannins has a harmonious finish that drags on a gluttony of red fruit coulis.
The flexibility of the vintage, makes this wine very accessible now but it will continue to improve in the next 8 years.
The finesse of this cuvée will express itself perfectly on a poultry supême with cream and its vitelotte puree.
