In 1924, the Baroness of Bay bequeathed a vast estate to the Hôtel-Dieu in memory of her father Jean-Louis PESTE, who practised medicine at the Hospices de Beaune for more than 30 years in the mid-19th century.
This cuvée comes from very old vines and vines planted before 1985 coming from three prestigious terroirs: the Chaumes, the Bressandes and the Greves.
The color is clear with a deep garnet. Very expressive nose with aromas of gooseberry and cooked cherry with hints of pepper. This refined, round and velvety wine with finely melted tannins, offers a balance worthy of the greatest vintages.
This great vintage is already very pleasant to drink now, but it will increase in complexity in the next 10 years.
This Grand Cru is already very pleasant to drink bottle size, but in magnum you should save it for another 4 years in a good cellar to reach full maturity. To keep maximum 15 years more.
Deserves the company of a beautiful piece of meat such as a Rossini tournedos.
