Wife of Nicolas Rolin, founder of the Hospices de Beaune, Guigone de Salins moved from Autun to Beaune after her husband’s death, to take over the management of the Hôtel-Dieu, to which she devoted great devotion and a good part of her fortune. This cuvée, dedicated to her, is made from three fine climats: Les Bressandes, Les Seurey and Les Champs-Pimont.
The color is a deep, intense ruby. The bouquet is rich and powerful, revealing delicious aromas of red and black berries, with cherry being the star. The whole is enhanced by subtle woody notes that add great finesse from the outset. This elegant wine, marked by silky tannins, has a harmonious finish that lingers on a delicious red fruit coulis.
Voluptuous and well-structured, this wine is built for long ageing, but rest assured, your patience will be well rewarded.
The finesse of this cuvée is perfectly expressed on roast capon with a morel cream sauce.
