This cuvée, the most prestigious in Pommard from the Hospices de Beaune, is made from the Epenots climat, which is south-facing and brings finesse to the wine, the Refène, which is grown in limestone-rich soils that enhance and give the wine good aging potential, and the Rugiens Hauts, whose deep marls provide beautiful energy. It pays a well-deserved tribute to the Sisters of Charity, who provided care to the “poor and sick” and often left their estates to the Hospices. This wine unveils all its qualities to captivate us, starting with a luminous robe of intense garnet. The nose, a true concentrate of aromas, is a blend of wild strawberries, black cherries, black currants, ripe plums, peony, black pepper, and roasted notes. On the palate, it is eloquent, both powerful and elegant, with good structure and remarkable intensity. The tannins are firm yet silky, offering a velvety and harmonious texture. A beautiful acidity balances the entire composition. The finish, with fruity flavors, has an incredible length.
This nectar, which Burgundy wine enthusiasts will have a hard time resisting, can age for 10 to 15 years in a good cellar, allowing its aromas to develop further and its tannins to blend harmoniously, revealing magnificent complexity.
This wine of character deserves a dish that can stand up to it. A pigeon salmis with cep mushrooms would be a perfect table companion.
