Mathusalem Beaune Premier Cru Cuvée Guigone de Salins 2019, Hospices de Beaune

Wife of Nicolas Rolin, the founder of the Hospices de Beaune, Guigone de Salins, moved from Autun to Beaune after the death of her husband, to take the direction of the Hôtel-Dieu to which she devoted great dedication and a good part of her fortune. This cuvée dedicated to him consists of three beautiful climates which are the Bressandes, the Seurey and the Champs-Pimont. The color is of a deep and luminous ruby. On the nose, aromas of black fruit, kirsch and violet are intertwined, complemented by slightly roasted notes. The mouth, superbly balanced is intense and subtle at the same time. The very silky tannins give it a rare elegance. The long and very fruity finish is enhanced with a touch of salinity.

Tasting :
These large size bottles are conducive to a long ageing, let’s hope that after twenty years in the cellar, your pleasure will be at the height of the container.

Pairings :
This wine will go perfectly with a piece of beef as well as a beautiful Bresse poultry without forgetting our slightly full-bodied regional cheeses.
