Named after the nuns who cared for the sick since the foundation of the Hospices in 1443, some of whom made substantial bequests to the institution, this fine cuvée traditionally opens the famous Hospices de Beaune auction. It is made up entirely of Premier Cru vineyards, principally Les Bressandes (where all the vines date from 1985 or earlier), La Mignotte and Les Teurons.

The color is a luminous ruby. On the nose, aromas of black fruit, kirsch and undergrowth intermingle, complemented by lightly roasted notes. Superbly balanced on the palate, this wine is both intense and subtle. Very silky tannins give it a rare elegance. The long finish is fruity and slightly spicy.

Tasting: 

This succulent wine, reaching its peak, has enough balance to be kept for another 4-5 years.

It will delight wine lovers served with a truffled beef fillet.
